Job Description
The Senior Sous Chef is responsible for managing the private villa (Kataza House) kitchen under the Head Chef at Singita Volcanoes National Park. The role ensures food is produced and served to high standards, that kitchen operations follow hygiene, safety, and quality guidelines, and that staff are trained and supervised appropriately. In absence of the Head Chef, this person assumes full responsibility for the villa kitchen.
Job Requirements
- Oversee private villa kitchen operations adhering to Singita standards.
- Ensure portion control, stock rotation, and minimization of wastage.
- Supervise and train kitchen staff.
- Maintain cleanliness, hygiene, and a safe working environment in kitchen, fridges, and stores.
- Maintain and properly use kitchen equipment.
- Interact with guests to enhance their experience.
- Manage orders and inventory.
- Assist in or prepare pastry/dessert items: breads, croissants, ice-creams, sorbets, biscuits, etc.
- Support sustainability efforts and environmental practices.
Education
- Senior High School / Secondary School qualification.
Experience
- Minimum 3–5 years of management experience in a medium-sized kitchen.
- Strong understanding of kitchen procedures, timing, and menu planning.
Good to Have
- Ability to design menus and follow new food concepts.
- Knowledge of labor legislation.
- First Aid training.
- Good communication skills.
- Care in personal hygiene and grooming.
